In my 10-page tutorial on garden edging, I discuss such low-maintenance options as mowing strips. Incorporating a mowing strip into your edge will reduce up-keep, as you'll be able to "mow down" any weeds that pop through.
In terms of achieving a well-defined edge, a lot of that is visual. If you use the trenching method to edge, ensure that the trench is as straight as possible by setting up guides (with stakes and string, as you would to trim a hedge so that it's straight). For an edge that involves setting up some sort of barrier (be it plastic edging, bricks, etc.), a fresh layer of mulch on the planting-bed side of the barrier can really set off the edge (by way of contrast with a green lawn on the other side, for example).
